Galaktoboureko – Greek

This is the best recipe. Took me years to perfect, it’s not your typical home version but exactly like what you would buy at a Greek pastry shop. It’s super creamy

  • 5 eggs
  • 3 C whole milk
  • 3 C light cream
  • 11 oz sugar
  • 4 oz rice flour
  • 2 oz fine semolina
  • 3 tablespoons butter
  • Teaspoon vanilla
  • 1package phyllo
  • Syrup
  • 11/2c sugar
  • 1cwater

Use deep pan, I used 14 x11 3 deep

  1. Make syrup first and cool
  2. Scald milk and cream in pot
  3. Mix eggs,sugar,semolina and flour together with whisk
  4. Add to milk slowly(temper)
  5. Keep boiling until thick, about 5-8 min
  6. Butter pan ,add half on the bottom folding over sides so wen you add cream it will be totally enclosed
  7. Add cream then add top layers buttering every piece, fold in all layers and tuck in any remaining extra pieces
  8. Score slightly with very sharp knife
  9. Bake at 325 for 60 min
  10. Add syrup soon as it’s out of oven
