Homemade Pork Jerky


Homemade pork jerky (chu yuk gone)! Taught by someone’s dear mother 🤤

Ingredients

  • 2 lbs. lean ground pork
  • 225g sugar
  • 3 tbsp oyster sauce
  • 2 tbsp fish sauce
  • 2 tsp cooking wine
  • 1 tsp soy sauce

*optional: add chilli oil to make a spicy version*

Meat prep

  1. Place all ingredients into a bowl and mix. You really want to work the ground pork until it becomes a paste and comes together.
  2. Let it sit overnight in the fridge to marinate.

Cooking Directions

  1. Preheat oven to 225F and line two baking trays with aluminum foil.
  2. Evenly divide pork onto the trays and spread (try to reach into the very edges/corners of the tray).
  3. Bake for 45 mins.
  4. Drain the excess liquid and cut pork into four pieces (this will make it easier to flip later on).
  5. Increase oven temperature to 350F.
  6. Place back into oven and bake in 5 minute intervals. Flip pork during each interval and watch oven carefully (because there’s a lot of sugar, the pork will begin to caramelize quickly)

Cut into strips and enjoy!!!
