Gemista with bulgur instead of rice and meat. Vegetarian/Vegan/Gluten-free for those Meatless Mondays until I reach my Taco Tuesdays to stuff my face with meat, cheese, Greek yogurt (tastes just like sour cream), tomato, lettuce. But, I digress. Try this flavourful dish and let me know what you think.
Ingredients
- Vegetables of your choice -tomatoes, zucchini, peppers, eggplant
- 1 large onion
- 1 red onion4 spring onions
- 2 cloves of garlic
- 1 cup bulgur
- 1 vegetable stock cube
- 2 tablespoons tomato paste
- ½ can crushed tomatoes
- 1 cup parsley
- Water
- Salt
- Pepper
- Oil
- Inside of the vegetables except the peppers
Instructions
1. Take out the insides of the vegetables and keep them for later
2. Finely chop onions and garlic and sauté in olive oil
3. Add tomato paste and vegetable stock
4. Add bulgur and continue to simmer for some minutes and then add crushed tomatoes
5. Finely chop parsley and add to the mix. Add salt and pepper
6. Stuff vegetables with mixture and bake in oven until they soften and gets a nice color.
