The marinade is so good and chicken just falls apart… Though I cooked it for longer.
Ingredients
- 8 chicken drumsticks
- 4 chicken thighs with skin on
For the marinade:
- 2 garlic cloves crushed
- 2 tsp mild mustard
- 1 tbsp oregano dried
- 1 tsp sweet paprika
- 1 tbsp olive oil extra virgin
- salt
- Pfresh pepper
For the potatoes:
- 7 small potatoes quartered
- 1 tbsp olive oil extra virgin
- 4 onion quartered
- 1 tbsp rosemary dried
- 2 tbsp honey
- 1 lemon (its juice)
- salt
- fresh pepper
- 2 cups chicken broth
Instructions
- Preheat oven to 180oC/350oF
- Mix the chicken and marinade ingredients into a bowl, then set aside.
- In a separate bowl, mix the potatoes with the remaining ingredients (except for the chicken broth).
- Pour the chicken and marinade into a baking dish, then add the chicken stock, potatoes, onion and lemon cups.
- Bake for 50 minutes or until potatoes and chicken are thoroughly cooked.
- Remove from oven and rest for 5 minutes before serving.
